One of my favorite desserts is the Apple pie, and as there are so many versions, as with cheese, I can't resist trying all the recipes I find. In this case this recipe was seen to Webos Fritos quite a long time ago, but it had been recorded in my memory and finally the day came to prepare it.
For this recipe we are going to use homemade apple compote so that you do the whole process from beginning to end. It is true that you can use compote and puff pastry bought, but as home there is nothing, you know. We heat the oven to 190ºC heat up down without air. On a baking sheet without an edge, like that of cookies, we put baking paper, on it the sheet of puff pastry. Brush it with warm melted butter and sprinkle with a little sugar.
We place another tray on top and turn, we turn the puff pastry, so that now the brush and sugary part is the base. At the top we place the Apple compote, almost reaching the edge, and on it very thin apple slices, in an orderly and beautiful way.
Brush with butter, sprinkle with sugar. We put on the cake a rack, another tray or flat weight, to prevent the puff pastry from rising and bake for about 35 minutes, more or less, until we see that it is slightly golden.
Shortly before the end of the baking time we remove the upper tray and we let the cake brown. Remove from the oven and varnish with apple jelly or apricot jam. We serve immediately.

This thin and crispy apple pie should be taken warm, case fresh from the oven. It can be taken alone or with a little vanilla ice cream, contrasting in taste and temperature, making a dessert, which I assure you, is spectacular.
