Ingredients for 40 units

  • 150 g of warm whole milk, 50 g of butter at room temperature, 3 egg yolks, 20 g of fresh baker's yeast, 400 g of force flour, 10 g of salt, 50 g of melted butter for painting, sugar for sprinkle.

How to make brioche palmeritas

We start by undoing the yeast in the milk. In a large bowl, put the flour, make a hole in the center and add the other ingredients, including the mixture of yeast and milk. Then we knead everything until you get an elastic mass.

We form a ball with the dough and place it in a container smeared with oil, until it doubles its volume. We knead the dough again to extract the air, we split it in two and stretch it with a roller forming two rectangles. We paint them with melted butter and sprinkle them well with sugar.

We roll the two ends of each square of dough inwards, until they touch, and cut 1 cm thick slices, approximately. We flatten them lightly with a rolling pin and let them double in size before baking them in a preheated oven at 180º for ten or fifteen minutes. We let them cool and sprinkle them with ground sugar.
