Today a dessert for the sweet tooth, this express caramel pudding It tastes like this delicious cream, very typical in Argentina, but with the classic touch of the egg custard of a lifetime. In this case I wanted to try to make my own dulce de leche at home and as the amount that left me was given for several jars and it is not a cream that is consumed every day, nothing better than incorporating it in this flan, the truth is that its I loved the taste.
I have prepared it in the express pot which shortens the cooking time. Normally, the flan, unless I want to make individual flaneritas, I always do so, because I make sure they are set in a very short time. If you do not feel like doing it this way, you can prepare them in the classic way to the water bath in the oven, placing the cake on a tray with water that reaches half its height and cooking it for about an hour at 190 degrees.
- For the flan: 250 gr of dulce de leche, 80 gr of sugar, 500 ml of whole milk, 1 egg and 4 yolks, a dash of vanilla essence.
- For the candy: 6 tablespoons of sugar, 3 tablespoons of water.
How to make caramel custard
In a saucepan put the six tablespoons of sugar and three of water and heat on fire without stirring until a dark candy forms. Bathe the base of the flannel and the sides with the caramel. Let cool.
On the other hand heat in a saucepan milk, sugar and vanilla without boiling. Beat the egg yolks and add the dulce de leche. Mix it until it dissolves. Gradually add the milk to the previous mixture while stirring. Pour it into the flannel and close the lid.
In the express pot add as six fingers of hot water, put a grid for steaming or a metal lid so that the base of the flan does not touch the bottom of the pot. Put the flanera and count fifteen minutes since I reached the pressure. When time passes, separate the pot from the heat and let it gradually lose pressure. Allow to temper and refrigerate in the fridge for a few hours before unmolding or better overnight.

This express caramel pudding It is delicious accompanied by whipped cream or even with a good ball of some ice cream not very sweet. It is not as cloying as the original dulce de leche, but its caramel flavor is delicious.
